Eggless Chocochip Choco Cupcakes With Chocolate Buttercream Frosting..!!!








































My daughter is a fanatical chocolate lover. Be it an ice-cream, cake or dessert her mind and tastebuds always revolve around chocolate. Since her very tender age she does not even want to try any flavor other than that. Therefore, making chocolate cakes at home is one of my unvarying works. Mostly I make cakes with eggs but this time my wanderlust mind asks me to go eggless. So this time I made Choco-chip cupcakes with chocolate buttercream frosting without using eggs. The outcome was fantastic and wholly loved by her and her friends.
Here is how to make it:



Ingredients:

                            :For the Cup Cakes:


  1. All Purpose Flour ( I used self raising flour, will be available in supermarkets): 1 Cup
  2. Granulated Sugar: 1  Cup (  I used 1 1/2 Cup as it was in powdered form)
  3. Unsweetened Cocoa Powder: 1/3 Cup
  4. Baking Powder: 1 tsp.
  5. Baking Soda: 1/4 tsp.
  6. Salt: Just a pinch
  7. Oil: ½ Cup
  8. Water: 1 Cup
  9. Distilled Vinegar: 1 tbsp.
  10. Vanilla Extract: 1 tsp.
  11. Choco Chips: A handful.


              : For Butter Cream Chocolate Frosting: 


  1. Unsweetened Chocolate : 125 gm.
  2. Butter: 2/3 Cup (preferably unsalted version, and the butter should be kept at room temperature for sure)
  3. Confectionary / Icing Sugar: 1 ½ Cup
  4. Vanilla Essence: 1 ½ tsp.


 Process:

                                   Making Cup Cakes



  1. Preheat the oven to 350 degrees F or 180 degrees C for 10-15 minutes.
  2. Prepare your cupcake baking tray with the cupcake liners. If you don’t have cupcake liners then grease it with little butter.
  3. Take a bowl and sieve all the dry ingredients together i.e. flour, cocoa powder, sugar, salt, baking powder & baking soda. Mix them well.
  4. Take an another bowl and add the liquid ingredients together i.e. water, oil , vanilla extract and the vinegar.
  5. Then pour the liquid ingredients slowly and gradually into the dry ingredients and mix well. But remember not to over mix them.
  6. Now pour the batter into the cupcake liners carefully and fill each other cupcakes liners only up to 2/3 rd.
  7. Sprinkle few chocochips on the top.
  8. Now bake them in the preheated oven for 20-22 minutes. Time of the baking may vary according to the power of the ovens. Once done insert a toothpick to check whether it comes out clean or not. If it comes out clean then your cakes are ready.
  9. Let them cool in the baking pan for few minutes. Then remove the cupcakes from the pan and let it cool completely.


                                   Making Frosting:



  1. I melted the chocolate using the double boiler method. For this you have to take a sauce pan filled with about an inch of water, bring it to boil. Put a heatproof bowl on top . Add the chopped chocolate into the top bowl. Let it melt with stirring constantly. Soon the chocolate will be melted. Now let the melted chocolate come to the room temperature and make it cool completely.
  2. The melted chocolate must be cooled down. Otherwise the frosting will be very runny and you couldn’t able to frost.
  3. Now take a bowl, put the room temperature butter and using a electric mixer mix it till it becomes soft and fluffy.
  4. Add the icing sugar into it and mix it very well to get a smooth and creamy batter.
  5. Add the vanilla extract whisk it.
  6. Then add the cooled and melted chocolate and whisk it again at high speed to get a very nice soft, smooth, fluffy and creamy frosting.
  7. Now put them into the piping bags and frost them on the top of the completely cooled cupcakes (don’t frost when the cupcakes are hot or warm, frosting will be runny in this way) and decorate according to your choice.

Eggless Apple Cake..!!!























I purely love eggless baking. It’s not only easy, quick and hassle free but also the cakes you get, are super delicious, moist and spongy. Eggless baking may be little delicate but once you master the art of it you will also start loving eggless baking. Today, I am going to share a perfect tea time cake recipe, Eggless Apple Cake which is not only very easy to make but also is very delicious too.

Here is how to make it :

Ingredients:


  • All-purpose flour 1 Cup
  • Sugar : 1 Cup ( I used white powder sugar, you may use granulated sugar or brown sugar whatever you have)
  • Apple: 1 (Grated)
  • Oil : 65 ml ( ¼ th Cup approximately)
  • Lime Juice : Juice from a half lime
  • Vanilla essence: 1 Tablespoon
  • Baking powder: 1 Tablespoon
  • Baking soda: 1 Teaspoon
  • Cinnamon Powder: 1 tsp. (Optional, skip it if you don’t have it)
  • Milk: ¼ th Cup


Process:



  • Grate the apple first.
  • Heat a  non-stick pan and add the sugar. Lower the flame and add the grated apple. Stir it. Soon the apple and the sugar will mix with each other. Cook until the sugar gets completely dissolved. Now turn off the flame and pour the oil into it little by little (don’t pour all the oil at a time) and stir continuously. Squeeze the lemon juice and add the vanilla essence into it. Mix well.
  •  
  • Now transfer the apple, sugar and oil mixture in a big bowl.
  • Start sieving the dry ingredients in a separate bowl. Mix in the all-purpose flour, baking powder, baking soda and cinnamon powder and mix well.
  • Now in the apple mixture bowl gradually add the dry ingredients. Don’t add all the dry ingredients once at a time. Add the milk and whisk to get smooth batter. The batter will not be very smooth as grated apples are there in the mixture. But don’t bother.
  • Preheat the oven at 180 degree for 10-15 minutes.
  • Meanwhile prepare your baking pan. Grease the tray with little butter and put a parchment or butter paper into it. Grease that paper also. In this way, removing cake from the cake tin will be very easy.
  • Pour the batter into the prepared cake tin uniformly.
  • Start baking it at 180 degree C or 350 degree F for 30-40 minutes. The time may vary according to the power of the oven. Therefore, it’s better to keep checking your cake at some intervals. Insert a fork inside the cake, if it comes out clean then your cake is ready.
  • Allow it to cool for sometimes. Then demold it and cut it into pieces and serve.

No Pectin Plum Jam...!!!!


















The other day in the fruit market, when  I found beautiful fresh sweet plums,I bought few of them and decided instantly that I would make plum jam with them. These fruits are not only fun to eat but they are also highly nutritious. As with other dried fruits, they are available year round. These are an excellent source of Potassium, Calcium and Vitamin C. Not only that but also these are rich in fibers too.











Now let’s come to the point and start discussing the recipe. I made this jam with a very simple process and didn't use pectin too. As preservative I used lemon juice which will keep the jam fresh for few months.




Ingredients:



  • Plums: 5-6 nos. (Chopped, discarding the seeds inside)
  • Sugar (preferably powdered) :1/2 Cup or as per your choice.
  • Lemon Juice: 1 tbsp.
  • Ginger Paste: 1 tbsp.(very smooth)
  • Salt: 1 tsp.
  • Water : 2 Cups
  • White Oil: 1/4th tsp.



Process:



  • Cook the chopped plums  with water for few minutes until it becomes tender. Turn off the flame . Drain the excess water and let it cool for some time.
  • Now coarsely blend the boiled plum using a blender.
  • Now, heat  the oil in a pan. Once the oil becomes hot add the boiled plum along with the ginger paste, salt and sugar and stir it very well. Let it cook for some time on high flame, stirring occasionally until a smooth, shiny texture comes. Once done, make the flame very low and add the lemon juice. Stir it well and on the low flame cook for 2-3 minutes.
  • Turn off the flame now. Your plam jam is ready. Let it cool and put it inside a container. Keep it inside the refrigerator or outside. It will be fine for few months.

Chicken Cutlet With Chicken Fillet..!!




































Making a healthy and delicious evening snacks on a regular basis makes me sometimes out of my mind. I simply cant decide what should I prepare which will be good in taste and provide some goodness to health. I prefer to drink a glass of juice or a whole fruit during this time but my daughter since her more young age prefers to eat something delicious. Today I am going to share an idea of making easy chicken cutlet which not only you can enjoy with your family but also you can serve it as evening snacks or appetizer to your guests. I am very sure of the fact that you are going to enjoy this to the fullest.
Process of making is extremely easy. Few months back I have shared an another recipe of chicken cutlet which I made with minced chicken(Chicken Cutlet with Keema) . You can go for that option too but this one is more easy to make.


Here Comes detail recipe:

Ingredients:


  • Boneless Chicken Breasts: 1
  • Onion: 1( medium, finely chopped or paste)
  • Ginger:1''( paste)
  • Garlic: 2 tsp ( crushed or paste)
  • Vinegar:1 tsp.
  • Salt:To taste
  • Black Pepper Powder:2 tsp.
  • Red Chili Powder: 1/2 tsp ( optional)
  • Eggs: 2 (beaten with little salt)
  • All Purpose Flour(plain maida): 1/2 cup or as per the requirement to coat the chicken pieces.
  • Freshly Prepared Bread Crumbs: 1 Cup ( or as per the requirement to coat the chicken pieces well)
  • Oil: Enough for deep frying.





Process:











  • Take an extremely sharp and big knife( preferably chopper) and  make a few thin slices(fillets) of the chicken breast. Form each of the breast( of 150 gm weight) 3/4 pieces of  thin fillets can be removed. Wash and pat dry each of the fillets.
  • Now take each of the fillets in between two tissue paper and with a wooden rolling pin ( you can use the wooden portion of your knife) bash/whack/roll/hit it until the fillets become little flattened. But try to do it very carefully so that the fillets can not be broke.
  • Now take a large bowl and mix the chicken fillet with onion, garlic, ginger, vinegar, salt, black pepper powder and chili powder. Mix thoroughly and keep the bowl separately covered for 30 mins atleast.
  • Now beat the eggs with little salt and keep aside. Take two flat plates and arrange the  all purpose flour and the bread crumbs.
  • Now take each of the chicken fillets from the bowl ( marination bowl) and first coat them in a layer of flour.
  • Then grab each of them and dip into the egg mixture and give a final coating of bread crumb very well.You may use a tong while doing this so that all the bread crumbs, eggs and flour cant be stick to your hands and you can easily finish all the processes well.
  • Once the coating process is done, heat the oil in a deep bottom vessel and fry them until golden brown color appears.
  • Absorb the excess oil using a tissue and serve the chicken cutlets with your favorite salads and sauce.




#Note: You may bake your chicken cutlets too. For this preheat your oven to the maximum settings ( 180-200 degree celcius) .Take a big baking tray and place a non stick baking parchment paper.Grease it generously with white oil or olive oil.Place the chicken pieces on the baking sheet and sprinkle little more oil on the top. Bake it into the preheated oven until the crust becomes golden brown in color. You may require to flip the chicken pieces in between.Take them out of the oven and serve.

Kids Friendly Egg Fried Rice...!!!


































Being a home maker and a mom everyday I need to do loads of house hold works and after that sometimes, even the name of cooking make me feel exhausted. That's why most of the time I go for a simple preparation which we can enjoy together, I mean which is good in taste and nutritious for three of us. This rice preparation is one of them . Whenever I don't remain in the mood of doing nothing I quickly make this which I think is far better than any store bought food.



















Here is the entire process:


Ingredients:


  • Cooked Rice:2 Cups
  • Sliced Onion:1 /2 Cup
  • Thin Sliced Bell Peppers(green,yellow or red whatever you have) :1/4 th Cup
  • Minced Garlic:1 tbsp
  • Minced Ginger:1 tsp.
  • Chopped Tomato:1/4 cup
  • Eggs:2/3 (scrambled )
  • Carrot:1/4 cup ( thin sliced,optional)
  • French Beans:1/4 Cup ( chopped,optional)
  • Salt:As per taste
  • Pepper Powder:1 tsp.
  • Tomato Ketchup:2 tsp.
  • Chili Sauce:1/2 tsp.
  • Soya Sauce:2 tsp.
  • Cooking Oil:2 tbsp.
  • Spring Onion: 1/4 cup (chopped)
You may use any other vegetables of your choice.



Process:
  • Make ready your cooked rice and scramble the eggs at first.
  • Heat the oil in a deep bottomed vessel. At first add the minced garlic and the ginger and saute for few minutes at medium to low flame. Then add the chopped onion, capsicum ,tomato , carrot, french beans or any other vegetables you are using. Saute for few minutes until all the veggies become little tender.Sprinkle salt(be careful about the amount of salt as soya sauce will be used in this preparation which itself has salt ), pepper powder and mix. Then pour the tomato ketch up, chili sauce and half of the soya sauce. Mix well and at medium flame cook for 5/6 minutes.
  • Add the scrambled egg and cook for few seconds..
  • Now add the cooked rice and thoroughly mix it with all the veggies ,egg and spices.
  • Pour the rest of the soya sauce and give a nice stir. Now add the chopped spring onion and cook for few minutes.
  • Your Egg Fried Rice is ready to serve.
  • Serve it with chili chicken or manchurian preparation or even it tastes good alone.

Burnt Garlic And Dry Red Chili Flavoured Soya Fried Rice...!!!!






























A very tasty and healthy rice preparation which is extremely easy to make and hence less time consuming and  fuss free . It is very good for your little one's lunch box too.

Here is the entire process of making Burnt Garlic and Chili Flavoured Soya Fried Rice:





Ingredients:


  • Basmati Rice: 1 Cup (soaked in water for 15 minutes)
  • Soya Chunks:1 Cup
  • Lemon Juice:2 tbsp.
  • Cumin Seeds:1/2 tsp.
  • Cashew Nuts:10/15 nos.
  • Onion : 1 (chopped)
  • Green Bell Pepper /Capsicum : 1 (Chopped)
  • Refined Oil:2 tbsp.
  • Dry Whole Red Chili:2
  • Red Chili Powder:1 tsp.
  • Salt:To taste
  • Garlic:1 tbsp .(Crushed or finely chopped)
  • Ginger Paste:1 tsp.
  • Water: As per the requirement.



Process:

  • Cook the rice until 70% done. You may cook your rice in microwave too. But while boiling the rice don't forget to add a pinch of garam masala powder, 1 tsp of white oil and 1 tsp of lime juice or vinegar  ( it will keep the rice grains separated from each other and make the rice more whitish). Drain the excess water and spread the rice on a flat plate.
  • Now boil the soya chunks in water with a pinch of salt till they become soft.Then soak them in 1/4th cup of cold water with lemon juice for 15 minutes.Take them out and squeez them carefully to drain the excess water.
  • Now heat oil in a deep bottomed vessel and add the chopped garlic and dry red whole chili first. At high flame fry them till the nice aroma comes out.Now lower the flame to middle and add the cumin seeds . Let it splutter and add the cashew nuts. Fry little. But be careful so that it cant be burnt.
  • Add the chopped onion and capsicum and cook until they become little soft.Fry little and add the soya chunks. Add the ginger paste, chili powder,little salt and saute 2/3 minutes.
  • Now add the rice and mix in thoroughly and at the very low flame cook it for 5/6 minutes. Before turning off the flame don't forget to check the seasoning.
  • Burnt Garlic and Dry Red Chili Flavoured Soya Fried Rice is ready to serve.

Paneer Tikka Kathi Roll...!!!











































"Kathi"is a Bengali word that means stick or skewer which is generally used to make kebabs. Kathi Roll is a famous street food and it is said that it was originated in Nizaam Restaurant ( the famous restaurant which sold paratha and kebabs and other Mughlai foods),in Kolkata, India. The original kathi roll is  kathi kebabs enclosed in a paratha(fried Indian flat bread). At the very beginning ,in Nizaam restaurant,the iron skewers were used to make the kebabs but later they moved to the bamboo skewer because of its light weight and easy availability. In this way, the name kathi roll was originated .But with time huge variants of this kathi roll have evolved and nowadays any type of Indian flat bread(roti, paratha ,romali roti or even naan)  stuffed with any filling or stuffing (even when neither kebabs nor the kathi is involved)  is called kathi roll.


Today I am going to share the recipe of Paneer Tikka Kathi Roll recipe where marinated and slightly fried paneer cubes  are wrapped in chapati/roti ( whole wheat Indian flatbread). It is a very delicious and filling preparation which is equally good for the adults and the little ones.

So here goes the process.


Ingredients:


A.   For the Marinade:


  • Unsweetened Yogurt:1/2 Cup
  • Chili Powder:1/2 to 1 tsp.
  • Turmeric Powder:1/2 tsp.
  • Ginger Paste:1/2 tsp.
  • Garlic Paste:1/2tsp
  • Besan (Bengal Gram Flour):1/2 tsp.
  • Chat Masala Powder:1/2 tsp.
  • Garam Masala Powder:1/4 tsp.
  • Kasori Methi,(Dried Fenugreek Leaves):1/2 tsp.
  • Salt: To Taste.




B.    For Paneer Tikka:


  • Paneer/Cottage Cheese Cubes: 1 Cup
  • Capsicum:1 medium (diced)
  • Onion:1 medium (diced)
  • Oil: 1 tbsp ( for greasing and cooking)


C.   Few Other Ingredients:

  • Onion Rings: 3/4 th Cup
  • Chaat Masala: To Taste.
  • Roti/Chapati :4 ( I made the rotis with the whole wheat bread, but you may used paratha or store bought tortilla too)




D.  For Making Roti:



  • Whole Wheat Flour: 1 Cup
  • Water: Enough to make a soft dough.
  • Salt: A Pinck
  • Oil: 1 tsp.

Process:

                                                             Stuffing the Roti..

  • Take all the ingredients mentioned to prepare the marinade ( in A.) in a big bowl and add the paneer cubes, diced onions and diced capsicum.Mix very well. Keep it covered for 30 minutes to 1 hour.
  • Mean while combine all the ingredients mentioned to prepare the roti ( in D.) and make a soft yet firm dough. Divide the dough into four equals balls. Using little wheat flour roll out each of the balls and make a round roti. Heat a tawa ( griddle ) and cook each of the round roti properly on both sides until the golden spots appear appear. Now carefully transfer it on the flame ( let it be in  high flame).Let it puff and immediately transfer it to the casserole or hot pot. .You may make paratha also instead of roti or even you may use the store bought tortilla to warp the stuffing.
  • Now heat a non stick tawa(griddle) or flat pan and grease it with the oil.Now on medium flame saute the paneer,capsicum and onion marinade for few minutes. Don't over fry it. Once it is done keep it separately.
  • Now in a separate bowl mix the onion rings with the chaat masala.
  • Then take a roti and place it on a clean,dry flat dish or plate. With a spoon add 1/4 th of the prepared paneer tikka and the chaat masala mixed onion rings and then covered the stuffing with the roti. If required insert a bamboo skewer in the middle of the wrap so that it cant open.
  • Repeat the same process for the rest of the rotis.
  • Serve & Enjoy.
